How to cook Nepalese Rice Pudding (Kheer)

Nepalese Rice Pudding or Kheer is a popular dessert in Nepal and an integral part of Nepalese custom & traditions.
Kheer can be cooked up in various different ways, below is our take on how to cook up a “delicious Nepalese dessert” at home.
Ingredients
- 1 cups rice (Arborio makes a good Kheer)
- 1 litre full cream milk
- 200 gm sweetened condensed milk
- 1 tablespoon Ghee (clarified butter)
- 1 tablespoon chopped dry fruits
- 1 tablespoon chopped almond/cashews/grated dry coconut
- 5-6 cardamom pods sliced
Steps
- In a big container, pour milk and sweetened condensed milk & wait until it boils
- In the meantime mix rice with ghee using your hand. Please do this without washing the rice with water.
- Pour rice into the hot boiling milk and stir continuously
- Cook the mixture on low heat until the rice gets cooked, this might take up to 30 mins
- Turn off the heat and add chopped dried fruits, nut mix, cardamom pods and stir until is mixed well
- Kheer is pretty much ready as it turns thicker
