JOGI TARKARI – NEPALI MIX VEGETABLES

This Nepalese style vegetable curry is very light in spices and will clean out your vegetables in the fridge. There is no such thing as set ingredients (vegetables), try with whatever vegetables you can find and this will make you a great winter vegetable curry.

Ingredients

  • 2 tbsp cooking oil
  • 1 onion, sliced
  • ½ tsp finely grated ginger
  • 1 small clove garlic, crushed
  • 2 potatoes (300 g), peeled and diced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 chopped tomatoes
  • Vegetables such as zucchini, capsicum, cauliflower, broccoli, beans, peas, carrot, bamboo shoots etc. (100 gm each)
  • 1 tsp chilli flakes
  • salt, to taste
  • 50 g sliced bamboo shoots
  • chopped coriander or shallots, to garnish

Instructions

  • Pour oil into a saucepan and place over medium heat. Once the oil is hot, fry the onion, ginger, and garlic until golden.
  • Add the potato to the pan and fry for few minutes
  • Stirring regularly, then add the cumin, ground coriander, chili & salt
  • Add the vegetables in about 2 mins of adding the spices, keep stirring for a little bit
  • Add tomatoes and maybe 50 ml of water, and cover the lid for next 5 mins
  • Add bamboo shoots and stir and leave it covered for another 5-7 mins or until you like your veggies cooked
  • Garnish with coriander or shallots and serve with rice
